- 1 lb gnocchi (fresh or frozen)
- 2 cups fresh tomatoes, halved
- 8 oz fresh mozzarella cheese, torn
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Fresh basil and oregano (to taste)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- Roast the tomatoes on a baking sheet with olive oil, salt, pepper, and garlic for about 20 minutes.
- Cook the gnocchi in a pot of boiling salted water until they float (about 2-3 minutes). Drain.
- Combine the roasted tomatoes, gnocchi, mozzarella, fresh herbs, and a drizzle of olive oil in a bowl.
- Transfer the mixture to a greased baking dish and spread it evenly. Top with extra cheese if desired.
- Bake for 15-20 minutes until the cheese is melted and bubbly.
- Serve hot, garnished with fresh herbs.
