Description

Ingredients

  • 1 lb gnocchi (fresh or frozen)
  • 2 cups fresh tomatoes, halved
  • 8 oz fresh mozzarella cheese, torn
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Fresh basil and oregano (to taste)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the tomatoes on a baking sheet with olive oil, salt, pepper, and garlic for about 20 minutes.
  3. Cook the gnocchi in a pot of boiling salted water until they float (about 2-3 minutes). Drain.
  4. Combine the roasted tomatoes, gnocchi, mozzarella, fresh herbs, and a drizzle of olive oil in a bowl.
  5. Transfer the mixture to a greased baking dish and spread it evenly. Top with extra cheese if desired.
  6. Bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Serve hot, garnished with fresh herbs.
