Description

A comfort dish featuring creamy baked feta and sweet roasted cherry tomatoes, mixed with pasta for a rich, flavorful meal.


Ingredients

  • 1 block of feta cheese
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 8 ounces pasta (penne or spaghetti)
  • 2 cloves garlic, minced
  • Fresh basil and oregano to taste
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a large baking dish with the feta in the center and scatter the cherry tomatoes around. Top with minced garlic, olive oil, salt, pepper, and herbs.
  3. Bake for about 30 minutes until tomatoes burst and feta softens.
  4. Cook pasta according to package instructions until al dente, reserving a cup of pasta water before draining.
  5. Combine the baked feta and tomatoes with the cooked pasta, using reserved pasta water for desired consistency.
  6. Garnish with fresh herbs and olive oil before serving.

Notes

For a tangy twist, substitute feta with goat cheese. Add sautéed mushrooms for extra flavor.
