- 1/4 cup freshly squeezed lemon juice
- Zest of 2 lemons
- 1 cup fresh blueberries
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a loaf pan or line it with parchment paper.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- Cream the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in sour cream and lemon juice.
- Fold dry ingredients into the wet mixture gently.
- Gently fold in blueberries and lemon zest.
- Prepare the crumb topping by mixing flour, sugar, and butter.
- Pour batter into the loaf pan and sprinkle crumb topping over it.
- Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- Dust with powdered sugar before serving.
Notes
For a gluten-free option, use almond flour or a gluten-free baking blend. Store leftovers in an airtight container for up to three days.
