Ingredients

  • 2 large eggs
  • 1 cup sour cream or Greek yogurt
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • 1 cup fresh blueberries
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a loaf pan or line it with parchment paper.
  3. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  4. Cream the softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, then mix in sour cream and lemon juice.
  6. Fold dry ingredients into the wet mixture gently.
  7. Gently fold in blueberries and lemon zest.
  8. Prepare the crumb topping by mixing flour, sugar, and butter.
  9. Pour batter into the loaf pan and sprinkle crumb topping over it.
  10. Bake for 50-60 minutes until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack.
  12. Dust with powdered sugar before serving.
