Delicious flatbreads filled with sautéed spinach and gooey cheese, perfect for family gatherings or as a comforting meal.
Ingredients

- 2 cups all-purpose flour (or whole wheat)
- 1/2 tsp salt
- 3/4 cup warm water
- 2 tbsp olive oil
- 2 cups fresh spinach
- 1 cup mozzarella cheese, shredded
- 1/2 cup ricotta cheese
- 2 garlic cloves, minced
- Pinch of salt
Instructions
- Combine flour and salt in a bowl. Gradually add warm water and mix until a soft dough forms. Knead until smooth, about 5 minutes.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Heat olive oil in a skillet over medium heat and sauté garlic until golden.
- Add spinach to the skillet and stir until wilted. Remove from heat and mix in the cheeses.
- Divide the dough into golf ball-sized portions and roll each out to about 6 inches in diameter.
- Scoop a generous amount of filling onto each rolled-out dough, fold over, and seal the edges.
- Cook each flatbread in a skillet over medium-high heat for 2-3 minutes on each side until golden brown.
- Serve warm, optionally with a garlic yogurt sauce or drizzled olive oil.
Notes
Feel free to mix and match the cheeses and add other fillings like mushrooms or leftover vegetables.
