Description

Delicious flatbreads filled with sautéed spinach and gooey cheese, perfect for family gatherings or as a comforting meal.


Ingredients

  • 2 cups all-purpose flour (or whole wheat)
  • 1/2 tsp salt
  • 3/4 cup warm water
  • 2 tbsp olive oil
  • 2 cups fresh spinach
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup ricotta cheese
  • 2 garlic cloves, minced
  • Pinch of salt

Instructions

  1. Combine flour and salt in a bowl. Gradually add warm water and mix until a soft dough forms. Knead until smooth, about 5 minutes.
  2. Cover the dough with a damp cloth and let it rest for 30 minutes.
  3. Heat olive oil in a skillet over medium heat and sauté garlic until golden.
  4. Add spinach to the skillet and stir until wilted. Remove from heat and mix in the cheeses.
  5. Divide the dough into golf ball-sized portions and roll each out to about 6 inches in diameter.
  6. Scoop a generous amount of filling onto each rolled-out dough, fold over, and seal the edges.
  7. Cook each flatbread in a skillet over medium-high heat for 2-3 minutes on each side until golden brown.
  8. Serve warm, optionally with a garlic yogurt sauce or drizzled olive oil.

Notes

Feel free to mix and match the cheeses and add other fillings like mushrooms or leftover vegetables.
