Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Mix the dry ingredients: In a bowl, combine flour, baking powder, and a pinch of salt.
  3. Cream together the butter and sugar: In a separate bowl, whisk the softened butter and sugar until light and fluffy.
  4. Incorporate the eggs: Beat in the eggs one at a time, then stir in the almond extract.
  5. Combine wet and dry: Gradually add the dry mixture to the wet ingredients, alternating with the milk. Mix until combined, but don’t overdo it!
  6. Gently fold in the blackberries: Using a spatula, incorporate them carefully so you don’t break them up too much.
  7. Pour the batter into your prepared pan and smooth the top.
  8. Bake for about 35-40 minutes, or until a toothpick comes out clean. The cake should be golden brown on top and a bit fragrant.
