Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Mix the dry ingredients: In a bowl, combine flour, baking powder, and a pinch of salt.
- Cream together the butter and sugar: In a separate bowl, whisk the softened butter and sugar until light and fluffy.
- Incorporate the eggs: Beat in the eggs one at a time, then stir in the almond extract.
- Combine wet and dry: Gradually add the dry mixture to the wet ingredients, alternating with the milk. Mix until combined, but don’t overdo it!
- Gently fold in the blackberries: Using a spatula, incorporate them carefully so you don’t break them up too much.
- Pour the batter into your prepared pan and smooth the top.
- Bake for about 35-40 minutes, or until a toothpick comes out clean. The cake should be golden brown on top and a bit fragrant.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

For special occasions, dust the top with powdered sugar or drizzle a simple glaze made from powdered sugar and almond extract.
