- 3/4 cup Biscoff spread
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your baking sheets by lining them with parchment paper.
- Mix the dry ingredients: in a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- Cream the butter and sugars: beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla: mix in the eggs and vanilla extract until well-combined.
- Combine the dry and wet ingredients: gradually mix the dry mixture into the wet mixture until just combined.
- Scoop the dough: using a cookie scoop or spoon, take a portion of dough, flatten it, and place Biscoff spread in the center.
- Seal the cookies: fold the edges of the dough to cover the Biscoff, roll into a ball, and place on the baking sheets.
- Bake: place in the preheated oven and bake for 10-12 minutes.
- Cool: allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a softer cookie, do not overbake and let cool to firm up. Chilling the dough can help with shape and texture.
