Ingredients

  • 2 fresh limes (juice)
  • 1/2 cup fresh cilantro (chopped)
  • 3 cloves garlic (minced)
  • 1 avocado (sliced)
  • 1 cup jasmine rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional spices: cumin or chili powder

Instructions

  1. Marinate the chicken by mixing lime juice, minced garlic, chopped cilantro, olive oil, salt, and pepper. Coat the chicken well and let it marinate for at least 30 minutes.
  2. Cook the jasmine rice by rinsing it under cool water until clear. Cook according to package instructions.
  3. Heat a skillet over medium-high heat with olive oil, then add the marinated chicken. Cook for 5-6 minutes on each side until golden brown.
  4. Slice the avocado after cooking the chicken.
