- 1 Sweet yellow Onion (chopped)
- 1 cup Vegetable broth
- 2 tsp Cumin
- 1 tsp Smoked paprika
- 1 tsp Chili powder
- 2 tbsp Olive oil
- Fresh parsley or cilantro (for garnish)
- 1 Lemon (juiced)
- 1 cup Coconut milk (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Add chopped onions and sauté until translucent.
- Add minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in cumin, smoked paprika, and chili powder, coating the onions and garlic.
- Add chickpeas, stirring everything together, and let cook for 5-7 minutes.
- Pour in vegetable broth and bring it to a simmer.
- Incorporate coconut milk if using, and let it simmer for about 10 minutes.
- Taste and adjust seasoning with salt, pepper, and fresh herbs; add lemon juice to brighten the flavors.
- Garnish with cilantro or parsley and serve over rice or quinoa.
Notes
For a creamier texture, mash half the chickpeas slightly before mixing back in. Serve with a side of garlic bread or pita.
