Description

Ingredients

  • 2 cans Chickpeas (drained and rinsed)
  • 3 cloves Garlic (minced)
  • 1 Sweet yellow Onion (chopped)
  • 1 cup Vegetable broth
  • 2 tsp Cumin
  • 1 tsp Smoked paprika
  • 1 tsp Chili powder
  • 2 tbsp Olive oil
  • Fresh parsley or cilantro (for garnish)
  • 1 Lemon (juiced)
  • 1 cup Coconut milk (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onions and sauté until translucent.
  2. Add minced garlic and cook for another 1-2 minutes until fragrant.
  3. Stir in cumin, smoked paprika, and chili powder, coating the onions and garlic.
  4. Add chickpeas, stirring everything together, and let cook for 5-7 minutes.
  5. Pour in vegetable broth and bring it to a simmer.
  6. Incorporate coconut milk if using, and let it simmer for about 10 minutes.
  7. Taste and adjust seasoning with salt, pepper, and fresh herbs; add lemon juice to brighten the flavors.
  8. Garnish with cilantro or parsley and serve over rice or quinoa.

Notes

For a creamier texture, mash half the chickpeas slightly before mixing back in. Serve with a side of garlic bread or pita.
