Ingredients

  • ½ cup unsalted butter (or coconut oil)
  • 1 cup granulated sugar (or coconut sugar)
  • 2 large eggs (or flaxseed meal with water)
  • 1 teaspoon pure vanilla extract (or almond extract)
  • ½ cup milk (or almond/oat milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. Whisk together flour, baking powder, and salt in a bowl; set aside.
  3. Beat unsalted butter and granulated sugar until fluffy and pale.
  4. Add eggs one at a time, followed by vanilla extract; mix well.
  5. Gradually mix dry ingredients, alternating with milk, until just combined.
  6. Spoon the batter into the cupcake tins, filling each halfway.
  7. Bake for 18–20 minutes or until a toothpick comes out clean.
  8. Cool completely before frosting with your choice of frosting.
