Description
A warm and comforting soup featuring vibrant flavors of tomatoes and basil, perfect for chilly days.
Ingredients
Scale
- 4 cups fresh tomatoes, diced
- 1 cup fresh basil leaves
- 2 cups cheese-filled tortellini
- 4 cloves garlic, minced
- 1 medium onion, chopped
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1/4 cup Parmesan cheese, grated
Instructions
- Sauté aromatics: In a large pot over medium heat, add a drizzle of olive oil. Once it shimmers, toss in the chopped onions and minced garlic. Sauté until the onions become translucent, about 3-5 minutes.
- Add tomatoes: Stir in your diced tomatoes, along with any juice for extra flavor. Cook for another 5-7 minutes, allowing the tomatoes to break down and release their sweet nectar.
- Incorporate broth and basil: Pour in the vegetable or chicken broth and bring to a gentle simmer. Toss in the fresh basil leaves, letting their fragrance infuse the soup.
- Cook tortellini: Once the soup is simmering, add the tortellini and let them cook according to the package instructions, usually about 5-8 minutes.
- Season to taste: Taste your soup, adding salt, pepper, and additional spices if desired. A touch of red pepper flakes can add a subtle kick if you please.
- Finishing touches: Remove the soup from heat; serve it hot, garnished with freshly grated Parmesan cheese and a few basil leaves.
Notes
Feel free to substitute fresh tomatoes with canned tomatoes or tortellini with other pasta types. Add in other veggies for extra nutrition.
