  • Diet: Vegetarian

Description

A delightful dessert combining fresh pineapple with a buttery, chewy crust, perfect for family gatherings and celebrations.

Ingredients

Scale
  • 1 ripe pineapple, crushed
  • 1/4 cup butter, melted
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking dish by greasing an 8-inch square baking dish with butter or non-stick spray.
  3. Mix the wet ingredients: beat together the eggs, then add melted butter and vanilla, whisking until smooth.
  4. Combine the dry ingredients in a separate bowl: flour, brown sugar, and salt.
  5. Stir in the pineapple, draining it if using canned.
  6. Fold the dry mixture into the wet ingredients until just combined.
  7. Transfer the mixture into the greased baking dish, spreading evenly.
  8. Bake for 30-35 minutes, until golden and a toothpick comes out clean.
  9. Cool slightly before serving warm, optionally topped with ice cream or whipped cream.

Notes

For a more indulgent flavor, sprinkle extra brown sugar on top before baking. Serve warm with plain yogurt or coconut flakes for added texture.
