Instructions
- Prepare the pesto: Combine sun-dried tomatoes, fresh basil, garlic, pine nuts, and Parmesan cheese in a food processor. Pulse until combined, then stream in olive oil while blending until smooth.
- Heat the skillet: In a non-stick skillet over medium heat, add the butter and allow it to melt.
- Assemble the sandwich: Spread pesto on one side of each slice of bread; layer cheese on the other side.
- Cook: Place one slice of bread pesto-side up in the skillet, add more cheese if desired, and top with the other slice. Grill for approximately 3-4 minutes or until golden brown; flip and grill until the cheese is melted.
- Serve: Remove from skillet, let rest for a minute, then slice and serve hot.
Notes
