- 2 cups fresh strawberries, hulled and halved
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin
Instructions
- Prepare the Strawberries: Rinse and hull the strawberries, then slice them in half. Place them in a bowl, sprinkle with a couple of tablespoons of sugar, and let them sit for about 15 minutes to draw out their juices.
- Whip the Cream: In a separate mixing bowl, pour in the heavy cream and add a splash of vanilla extract. Using a whisk or an electric mixer, beat the cream until soft peaks form.
- Make the Strawberry Puree: Blend the strawberries until smooth using a blender or food processor. Reserve some slices if you prefer a chunkier texture.
- Incorporate Gelatin: Dissolve gelatin in a small amount of hot water until fully melted. Let it cool slightly before adding it to the strawberry puree.
- Fold and Chill: Gently fold the whipped cream into the strawberry puree until just combined. Pour into dessert glasses and refrigerate for at least two hours to set.
- Serve: Garnish with whipped cream, fresh strawberries, or mint leaves.

Ensure your heavy cream is chilled before whipping for a fluffier texture. Avoid over-mixing the whipped cream.
