- 2 cups fresh strawberries, mashed and chopped
- 2 ½ cups all-purpose flour
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup whole milk
- ½ cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Prepare half of your strawberries by mashing and chopping, then set aside.
- Cream the butter and granulated sugar in a mixing bowl until light and fluffy. Add the eggs one at a time.
- Sift together the flour, baking powder, and salt in another bowl. Gradually add this to the creamed mixture, alternating with the milk.
- Fold in the mashed and chopped strawberries.
- Divide the batter between the prepared pans and bake for 25-30 minutes.
- Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Beat the cream cheese and butter until smooth, then add powdered sugar and vanilla extract.
- Layer one cake on a serving plate, spread frosting, add the second layer, and frost the top. Garnish with fresh strawberries.
- Serve and enjoy at your next gathering.
