  • 1 lb Boneless Chicken (breast or thighs)
  • 8 oz Fettuccine or Penne Pasta
  • 1/2 cup Chipotle Sauce
  • 1 cup Heavy Cream
  • 2 cloves Fresh Garlic, minced
  • 1 Onion, diced
  • 1 Bell Pepper, sliced
  • Olive Oil for sautéing
  • Fresh Herbs (Cilantro or Parsley)
  • Parmesan Cheese (optional)

Instructions

  1. Prepare the chicken: Slice the chicken into bite-sized pieces, season with salt and pepper, and set aside.
  2. Cook the pasta: Boil a pot of salted water and cook your pasta according to package instructions until al dente. Reserve some pasta water before draining.
  3. Sauté aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened. Stir in minced garlic and cook until fragrant, about a minute—don’t let it brown!
  4. Cook the chicken: Add the chicken to the skillet and cook until golden brown and cooked through, around 5-7 minutes.
  5. Add veggies: Toss in sliced bell peppers and cook for an additional 2-3 minutes until they start to soften.
  6. Create the sauce: Pour in chipotle sauce and heavy cream, stirring until well combined. Let it simmer lightly for a few minutes.
  7. Combine: Add the cooked pasta to the skillet, tossing everything together until well coated. Adjust seasoning with salt, pepper, and more chipotle sauce if you like extra heat.
  8. Finishing touches: Stir in fresh herbs and, if you’re feeling fancy, top with Parmesan cheese.
