- 1 can Black Beans (drained)
- 1 cup Sweet Corn
- 4 oz Cream Cheese
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1/4 cup Fresh Cilantro (chopped)
- 2 Jalapeños (finely chopped)
- Vegetable Oil (for frying)
Instructions
- Heat oil in a large skillet over medium heat and sauté chopped onions, bell peppers, and jalapeños until softened, about 3-4 minutes.
- Add shredded chicken, corn, black beans, cream cheese, and spices, cooking until everything is heated through.
- Lay an egg roll wrapper on a flat surface and spoon a generous amount of the filling into the center.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal, brushing edges with water to stick.
- Fry in hot oil (350°F) for 3-4 minutes until golden brown or bake at 400°F for 20-25 minutes until crispy.
- Serve warm with salsa, guacamole, or sour cream for dipping.
