Description

Crispy egg rolls filled with a savory blend of chicken, black beans, corn, and spices, perfect as appetizers or snacks.


Ingredients

  • 1 cup Cooked Chicken (shredded)
  • 1 can Black Beans (drained)
  • 1 cup Sweet Corn
  • 4 oz Cream Cheese
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1/4 cup Fresh Cilantro (chopped)
  • 2 Jalapeños (finely chopped)
  • Vegetable Oil (for frying)

Instructions

  1. Heat oil in a large skillet over medium heat and sauté chopped onions, bell peppers, and jalapeños until softened, about 3-4 minutes.
  2. Add shredded chicken, corn, black beans, cream cheese, and spices, cooking until everything is heated through.
  3. Lay an egg roll wrapper on a flat surface and spoon a generous amount of the filling into the center.
  4. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal, brushing edges with water to stick.
  5. Fry in hot oil (350°F) for 3-4 minutes until golden brown or bake at 400°F for 20-25 minutes until crispy.
  6. Serve warm with salsa, guacamole, or sour cream for dipping.
