Ingredients

- 1 lb boneless chicken breasts or thighs
- 8 oz spaghetti
- 1 can cream of mushroom soup
- 1 cup low-sodium chicken broth
- 1 can diced tomatoes
- 1 bell pepper, diced (red, yellow, or green)
- 2 cloves garlic, minced
- 1 onion, diced
- 1 tsp Italian seasoning
- Fresh parsley or basil for garnish
Instructions
- Season the chicken pieces with salt and pepper.
- Layer the diced bell peppers, garlic, and onion in the slow cooker.
- Pour in the cream of mushroom soup and diced tomatoes, mixing together.
- Add the chicken pieces on top of the mixture.
- Pour in enough chicken broth to cover the chicken.
- Sprinkle the Italian seasoning over the top and stir gently.
- Set the slow cooker on low for 6 to 8 hours or high for 3 to 4 hours.
- Cook the spaghetti according to package directions about 30 minutes before serving.
- Shred the chicken in the slow cooker and gently fold in the cooked spaghetti.
- Serve hot, garnished with fresh parsley or basil.
Notes
For added flavor, consider searing the chicken before placing it in the slow cooker. You can also add shredded cheese during the last 10 minutes of cooking for creaminess.
