- 2 lbs chicken (breast or thighs)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 2 potatoes, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Heat olive oil in a large pot over medium heat. Once shimmering, add minced garlic and chopped onions. Sauté until fragrant and translucent.
- Toss in diced carrots and celery, stirring occasionally. Let them soften for about five minutes.
- Add your chicken pieces, sautéing until lightly browned on all sides.
- Pour in the chicken broth along with diced potatoes (or any veggies you are using). Bring the mixture to a gentle simmer.
- Add your fresh herbs and season with salt and pepper. For an extra zing, don’t forget the lemon juice, which you can add later based on your taste preference.
- Allow the soup to simmer for about 30–40 minutes. The chicken should be tender, and the broth richly flavored.
- Before serving, taste and adjust seasoning as desired. If using leafy greens, stir them in just before serving, allowing them to wilt slightly.
- Ladle the soup into bowls, garnishing with additional fresh herbs and a crispy baguette on the side for dipping.
