Ingredients

  • 2 lbs chicken (breast or thighs)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 2 potatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Once shimmering, add minced garlic and chopped onions. Sauté until fragrant and translucent.
  2. Toss in diced carrots and celery, stirring occasionally. Let them soften for about five minutes.
  3. Add your chicken pieces, sautéing until lightly browned on all sides.
  4. Pour in the chicken broth along with diced potatoes (or any veggies you are using). Bring the mixture to a gentle simmer.
  5. Add your fresh herbs and season with salt and pepper. For an extra zing, don’t forget the lemon juice, which you can add later based on your taste preference.
  6. Allow the soup to simmer for about 30–40 minutes. The chicken should be tender, and the broth richly flavored.
  7. Before serving, taste and adjust seasoning as desired. If using leafy greens, stir them in just before serving, allowing them to wilt slightly.
  8. Ladle the soup into bowls, garnishing with additional fresh herbs and a crispy baguette on the side for dipping.
