Description

A delightful offering perfect for gatherings, this Red Velvet Cookie Cake mixes the rich flavors of cocoa and vanilla in a soft, chewy dessert.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 tbsp red food coloring
  • 1 tsp vanilla extract
  • For Cream Cheese Frosting: 8 oz cream cheese, softened, 1/2 cup butter, softened, 2 cups powdered sugar, 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prep your cake pan by greasing and lining with parchment.
  2. Combine the dry ingredients in a large mixing bowl.
  3. Mix the wet ingredients in another bowl until well combined.
  4. Fold the dry ingredients into the wet mixture carefully.
  5. Bake for 25-30 minutes or until a toothpick comes out clean. Cool for 10-15 minutes in the pan.
  6. Prepare the cream cheese frosting while the cake cools.
  7. Spread the frosting generously over the cooled cake.
  8. Serve and enjoy with friends and family!

Notes

For a lighter option, consider using applesauce instead of oil, and don’t overmix the batter to keep the cake soft.
