- 1 cup Greek yogurt
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup blueberries (fresh or frozen)
- 1 tablespoon sweetener (honey or maple syrup, optional)
Instructions
- Prepare the dough: In a large mixing bowl, combine the high-protein flour, baking powder, and salt. Mix well. Add the Greek yogurt and mix until a shaggy dough forms.
- Knead the dough: Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
- Shape the bagels: Divide the dough into equal portions. Roll each piece into a rope, about 8-10 inches long. Overlap the ends and pinch them together to seal.
- Make the blueberry swirl: In a small pot, combine blueberries and sweetener. Cook over medium heat until the blueberries burst.
- Prepare for baking: Preheat the oven to 375°F (190°C). Boil water and drop each bagel in for about 1 minute on each side.
- Bake the bagels: Place boiled bagels on a lined baking sheet and fill each with a spoonful of blueberry swirl. Bake for 20-25 minutes until golden.
- Cool and enjoy: Let the bagels cool slightly before serving, and enjoy them warm.
