Description

Ingredients

  • 16 ounces sliced mushrooms (cremini, button, or shiitake)
  • 10 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 3 cloves minced garlic
  • 1 diced onion
  • 2 tablespoons olive oil
  • Fresh herbs (basil, parsley, or oregano)
  • Salt and pepper to taste
  • Marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onion and garlic in olive oil until translucent, add mushrooms and cook until golden brown, then stir in spinach until wilted.
  3. Prepare the cheese mixture by combining ricotta, beaten egg, mozzarella, Parmesan, and seasoning.
  4. Layer the baking dish with marinara sauce, noodles, ricotta mixture, sautéed vegetables, and repeat until ingredients are used up, finishing with sauce and cheese on top.
  5. Bake covered for 25 minutes, then uncovered for another 15 minutes until golden and bubbly.
  6. Let it rest for 10-15 minutes before slicing.

Notes

Consider substituting traditional pasta with zucchini slices for a low-carb option. Let the lasagna fully rest to achieve clean cuts.
