- Lasagna noodles
- 16 ounces sliced mushrooms (cremini, button, or shiitake)
- 10 ounces fresh spinach
- 15 ounces ricotta cheese
- 1 cup shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 3 cloves minced garlic
- 1 diced onion
- 2 tablespoons olive oil
- Fresh herbs (basil, parsley, or oregano)
- Salt and pepper to taste
- Marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the onion and garlic in olive oil until translucent, add mushrooms and cook until golden brown, then stir in spinach until wilted.
- Prepare the cheese mixture by combining ricotta, beaten egg, mozzarella, Parmesan, and seasoning.
- Layer the baking dish with marinara sauce, noodles, ricotta mixture, sautéed vegetables, and repeat until ingredients are used up, finishing with sauce and cheese on top.
- Bake covered for 25 minutes, then uncovered for another 15 minutes until golden and bubbly.
- Let it rest for 10-15 minutes before slicing.
Notes
Consider substituting traditional pasta with zucchini slices for a low-carb option. Let the lasagna fully rest to achieve clean cuts.
