- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 eggs
- 1/2 cup milk
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/4 cup pure maple syrup
- 1 cup powdered sugar (for glaze)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a donut pan with non-stick spray or melted butter.
- Combine the pumpkin puree, granulated sugar, brown sugar, milk, and eggs in a large mixing bowl.
- Whisk until smooth and creamy.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Add the dry ingredients to the wet mixture gradually, stirring until just combined.
- Spoon the batter into the donut pan, filling each cavity halfway.
- Bake for 10-12 minutes, or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
- Prepare the maple glaze by whisking powdered sugar, maple syrup, and a splash of milk together until smooth.
- Dip the tops of the cooled donuts into the glaze, allowing the excess to drip off.
- Serve warm and enjoy!
Notes
For a vegan option, substitute the eggs with flax eggs or applesauce and use non-dairy milk.
