- 2 boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 1/4 cup butter
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
Instructions
- Prepare the chicken breasts by flattening them gently with a meat mallet. Season both sides generously with salt and pepper.
- Create a dredging station with three shallow bowls: one for flour, one for beaten eggs, and another for a mixture of panko breadcrumbs and Parmesan cheese.
- Dip each chicken breast into the flour, shake off any excess, coat it in the egg, and finally press it into the panko mixture for even coating.
- Melt butter in a skillet over medium heat. Add the coated chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through.
- Sprinkle more Parmesan cheese on top in the last minute of cooking to melt.
- Sauté any remaining garlic in the same pan and add it on top before serving. Garnish with fresh herbs.
Notes
For a vegetarian version, substitute chicken with thinly sliced eggplant. Ensure to space the chicken in the skillet for even cooking.
