- 2 cups cremini mushrooms, chopped
- 1 cup shiitake mushrooms, chopped
- 3 medium carrots, diced
- 2 medium Yukon Gold potatoes, diced
- 1 large sweet onion, diced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons fresh thyme
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons olive oil
- 1 cup frozen peas
- Fresh parsley, for garnish
Instructions
- Prep Your Ingredients: Chop your vegetables and have them ready.
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, stirring for 5 minutes.
- Add Mushrooms: Toss in the chopped mushrooms and sauté until they brown, about 5–7 minutes.
- Incorporate Vegetables: Add carrots and potatoes, stirring for another 5 minutes.
- Pour in the Broth: Add vegetable broth to cover veggies by an inch, bring to a simmer, and season.
- Simmer: Cover and let it simmer for about 30 minutes until the potatoes are tender.
- Finish with Peas: Stir in frozen peas 5 minutes before serving.
- Taste and Adjust: Taste the stew and adjust the seasoning as needed.
Notes
For a twist, substitute tofu or seitan for mushrooms, or use cauliflower or parsnips instead of potatoes.
