Ingredients

  • 1 cup shiitake mushrooms, chopped
  • 3 medium carrots, diced
  • 2 medium Yukon Gold potatoes, diced
  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons fresh thyme
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas
  • Fresh parsley, for garnish

Instructions

  1. Prep Your Ingredients: Chop your vegetables and have them ready.
  2. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, stirring for 5 minutes.
  3. Add Mushrooms: Toss in the chopped mushrooms and sauté until they brown, about 5–7 minutes.
  4. Incorporate Vegetables: Add carrots and potatoes, stirring for another 5 minutes.
  5. Pour in the Broth: Add vegetable broth to cover veggies by an inch, bring to a simmer, and season.
  6. Simmer: Cover and let it simmer for about 30 minutes until the potatoes are tender.
  7. Finish with Peas: Stir in frozen peas 5 minutes before serving.
  8. Taste and Adjust: Taste the stew and adjust the seasoning as needed.

Notes

For a twist, substitute tofu or seitan for mushrooms, or use cauliflower or parsnips instead of potatoes.
