  • 2 cups fresh mushrooms (button, cremini, or shiitake), chopped
  • 3 cloves garlic, minced
  • 4 oz cream cheese or ricotta
  • 1 cup fresh spinach
  • 1 tsp thyme or rosemary, chopped
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the filling: In a skillet over medium heat, drizzle olive oil. Sauté minced garlic until fragrant, then add chopped mushrooms. Cook until tender, around 5-7 minutes. Toss in spinach and wilt. Mix in cream cheese until combined.
  3. Stuff the chicken: Slice the chicken breasts horizontally to create pockets. Season with salt and pepper. Spoon the mushroom mixture into each pocket.
  4. Bake the chicken: Place stuffed breasts in a greased baking dish and drizzle with olive oil. Bake for 25-30 minutes, until reaching an internal temperature of 165°F (75°C).
  5. Serve and enjoy: Let the chicken rest before slicing. Garnish with fresh herbs.
