- 1/2 cup cornstarch
- 1 egg, beaten
- 1/2 cup all-purpose flour
- Vegetable or canola oil, for frying
- 1/2 cup sweet chili sauce

- 1/4 cup mayonnaise
- Fresh lime juice, to taste
- Chopped green onions, for garnish
- Sesame seeds, for garnish
Instructions
- Begin by preparing your shrimp. Rinse and pat them dry thoroughly.
- In a bowl, mix cornstarch, flour, and a pinch of salt together.
- In another bowl, whisk the egg lightly.
- Dip each shrimp into the egg mixture, allowing excess to drip off, then coat them with the flour-cornstarch mixture.
- Heat oil in a skillet over medium-high heat until shimmering.
- Carefully add the shrimp in batches to avoid overcrowding.
- Fry for about 2-3 minutes on each side, or until golden and cooked through.
- While shrimp are frying, prepare the sauce by mixing sweet chili sauce, lime juice, mayo, and Sriracha in a small bowl.
- Once the shrimp are done, let them drain on paper towels, then toss them in the sauce.
- Serve hot, garnished with chopped green onions or sesame seeds.
