Ingredients

  • 1/2 cup cornstarch
  • 1 egg, beaten
  • 1/2 cup all-purpose flour
  • Vegetable or canola oil, for frying
  • 1/2 cup sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1/4 cup mayonnaise
  • Fresh lime juice, to taste
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Begin by preparing your shrimp. Rinse and pat them dry thoroughly.
  2. In a bowl, mix cornstarch, flour, and a pinch of salt together.
  3. In another bowl, whisk the egg lightly.
  4. Dip each shrimp into the egg mixture, allowing excess to drip off, then coat them with the flour-cornstarch mixture.
  5. Heat oil in a skillet over medium-high heat until shimmering.
  6. Carefully add the shrimp in batches to avoid overcrowding.
  7. Fry for about 2-3 minutes on each side, or until golden and cooked through.
  8. While shrimp are frying, prepare the sauce by mixing sweet chili sauce, lime juice, mayo, and Sriracha in a small bowl.
  9. Once the shrimp are done, let them drain on paper towels, then toss them in the sauce.
  10. Serve hot, garnished with chopped green onions or sesame seeds.
