Ingredients

  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh basil or thyme (optional, for garnish)

Instructions

  1. Melt butter in a large skillet over medium heat. Add mushrooms and sauté for 5-7 minutes until golden brown.
  2. Incorporate garlic and spinach, continuing to sauté for 2-3 minutes until spinach is wilted.
  3. Pour in the heavy cream, stirring to combine and letting it simmer for 5 minutes to thicken.
  4. Cook gnocchi in a separate pot of boiling salted water until they float, about 2-3 minutes.
  5. Drain gnocchi and add to the skillet, tossing gently to coat.
  6. Sprinkle grated parmesan and season with salt and pepper. Add herbs if desired.
  7. Serve warm and enjoy!

Notes

Don’t overcook the gnocchi; they are ready once they float. Serve with crusty garlic bread or a salad.
