- 1 lb gnocchi
- 8 oz cremini mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- Fresh basil or thyme (optional, for garnish)
Instructions
- Melt butter in a large skillet over medium heat. Add mushrooms and sauté for 5-7 minutes until golden brown.
- Incorporate garlic and spinach, continuing to sauté for 2-3 minutes until spinach is wilted.
- Pour in the heavy cream, stirring to combine and letting it simmer for 5 minutes to thicken.
- Cook gnocchi in a separate pot of boiling salted water until they float, about 2-3 minutes.
- Drain gnocchi and add to the skillet, tossing gently to coat.
- Sprinkle grated parmesan and season with salt and pepper. Add herbs if desired.
- Serve warm and enjoy!
Notes
Don’t overcook the gnocchi; they are ready once they float. Serve with crusty garlic bread or a salad.
