- 1 pound boneless chicken breasts or thighs
- 8 ounces cream cheese
- 2 tablespoons Cajun seasoning
- 1 bell pepper, chopped
- 1 onion, chopped
- 8 ounces pasta (penne, rigatoni, or fettuccine)
- 1/4 cup fresh herbs (parsley or green onions)
- 1 cup chicken broth
- 3 cloves garlic, minced
Instructions
- Prep the ingredients: Chop the onions and bell peppers. Mince the garlic.
- Sear the chicken (optional): Heat a skillet with oil and sear the chicken pieces on both sides until golden brown.
- Combine in the Crock Pot: Add chicken, cream cheese, garlic, chicken broth, Cajun seasoning, onions, bell peppers, and any additional vegetables to the slow cooker. Mix well.
- Cook low and slow: Cover and cook on low for about 4 to 6 hours or high for 2 to 4 hours until chicken is tender.
- Prepare the pasta: Cook pasta according to package instructions, then drain.
- Combine and serve: Shred the chicken in the crock pot, stir in the cooked pasta, adjust seasoning, and garnish with fresh herbs. Serve hot.
Notes
For a lighter dish, use low-fat cream cheese. Adjust Cajun seasoning to personal preference.
