Delicious flautas filled with seasoned chicken, fried until crispy and served with a cooling crema.
Ingredients

- 1 lb boneless chicken thighs
- 8 tortillas (corn or flour)
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt to taste
- 1 cup Mexican blend cheese or Monterey Jack
- Oil for frying
Instructions
- Cook chicken in a skillet over medium heat with spices and a bit of water until cooked through.
- Shred the chicken into bite-sized pieces once cool.
- Warm tortillas slightly to make rolling easier.
- Fill each tortilla with a spoonful of shredded chicken and cheese, then roll tightly.
- Heat oil in a skillet and place flautas seam-side down.
- Fry until golden brown and crispy, about 4–5 minutes each side.
- Drain on paper towels to absorb excess oil.
- For a healthier option, preheat oven to 400°F and bake for 20–25 minutes until crispy.
Notes
Avoid overcrowding the skillet while frying for the best crispiness. Store leftovers in an airtight container for up to three days.
