- 8 oz Feta Cheese
- 1 cup Fresh or Frozen Cranberries
- 2 tbsp Honey
- 2 tbsp Olive Oil
- 2 tbsp Fresh Lemon Juice
- 1 tbsp Fresh Thyme or Rosemary
- Crackers, for serving
Instructions
- Prepare the cranberries: Rinse if fresh, thaw and drain if frozen.
- Cook the cranberries: Simmer with a splash of water for about 5 minutes until soft.
- Blend the base: Combine feta, cooked cranberries, honey, olive oil, and lemon juice in a food processor until creamy.
- Taste and adjust: Add more honey or lemon juice to balance flavors as needed.
- Flavor it up: Add herbs and pulse to mix.
- Chill out: Transfer to a bowl, cover, and refrigerate for at least 1 hour.
- Serve and enjoy: Drizzle olive oil on top, garnish with herbs, and serve with crackers.

For a vegan option, substitute honey with maple syrup and feta with vegan cream cheese.
