  • 1 cup Fresh or Frozen Cranberries
  • 2 tbsp Honey
  • 2 tbsp Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Fresh Thyme or Rosemary
  • Crackers, for serving

Instructions

  1. Prepare the cranberries: Rinse if fresh, thaw and drain if frozen.
  2. Cook the cranberries: Simmer with a splash of water for about 5 minutes until soft.
  3. Blend the base: Combine feta, cooked cranberries, honey, olive oil, and lemon juice in a food processor until creamy.
  4. Taste and adjust: Add more honey or lemon juice to balance flavors as needed.
  5. Flavor it up: Add herbs and pulse to mix.
  6. Chill out: Transfer to a bowl, cover, and refrigerate for at least 1 hour.
  7. Serve and enjoy: Drizzle olive oil on top, garnish with herbs, and serve with crackers.

Notes

For a vegan option, substitute honey with maple syrup and feta with vegan cream cheese.
