- 24 ounces full-fat cream cheese, softened
- ¾ cup granulated sugar
- 1 cup sour cream
- 1 tablespoon pure vanilla extract
- 3 large eggs
- 1 ½ cups crushed graham crackers
- ½ cup melted butter
- ½ cup granulated sugar (for crust)
Instructions
- Preheat your oven to 325°F (160°C).
- Combine 1 ½ cups of crushed graham crackers, ½ cup of sugar, and ½ cup of melted butter. Press into the bottom of a 9-inch springform pan.
- Bake for 10 minutes and then let cool.
- Beat the cream cheese in a large mixing bowl until smooth.
- Gradually add ¾ cup of sugar, mixing until creamy.
- Add the sour cream, vanilla extract, and eggs one at a time, mixing after each addition.
- Pour the filling over the cooled crust, smoothing it out evenly.
- Bake for 55-60 minutes, until the edges are set but the center remains slightly jiggly.
- Turn off the oven and crack the door to let the cheesecake cool for 1 hour.
- Refrigerate for at least 4 hours, preferably overnight.
- Serve with optional toppings like fresh fruit or whipped cream.
Notes
Let the cheesecake cool completely before removing it from the pan to avoid cracks. Chill overnight for the best flavor and texture.
