  • 1 cup Heavy Cream
  • 1/2 cup Granulated Sugar

Instructions

  1. Start by melting the chocolate in a double boiler or microwave, ensuring it doesn’t seize. Stir it until smooth, then allow it to cool slightly.
  2. Separate the egg yolks from the whites. In a bowl, whisk the yolks with granulated sugar until pale and thick.
  3. Stir the melted chocolate into the egg yolk mixture until well combined.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture, being careful not to deflate it.
  5. In another bowl, beat the egg whites until stiff peaks form. Slowly fold the whites into the chocolate mixture, maintaining the airy texture.
  6. Spoon the mousse into serving dishes and chill in the refrigerator for at least two hours.
  7. Consider garnishing with whipped cream, chocolate shavings, or fresh berries for a final touch.
