Ingredients

- 200g dark chocolate (at least 70% cocoa)
- 3 large eggs
- 100g granulated sugar
- 300ml heavy cream
- Pinch of salt
- 1 tsp vanilla extract
Instructions
- Melt the chocolate: Chop chocolate into small pieces and melt in a heatproof bowl over simmering water. Remove from heat and let cool slightly.
- Whip the cream: In a separate bowl, whip heavy cream until soft peaks form.
- Whisk the eggs and sugar: In another bowl, whisk eggs and sugar until fluffy and pale.
- Combine: Gently fold melted chocolate into egg mixture, then fold in whipped cream until just incorporated.
- Chill: Spoon mixture into serving dishes and refrigerate for at least 120 minutes.
- Serve: Add whipped cream or berries on top before serving.
Notes
Ensure the chocolate is not too hot to avoid cooking the eggs. Do not over-whip the cream.
