- 8 oz Cream Cheese (room temperature)
- 1 cup Sour Cream
- 1 cup Granulated Sugar
- 2 cups Fresh Cherries (pitted, or frozen)
- 1 cup Light-Roasted Unsalted Pistachios (chopped)
- 1 ½ cups Graham Cracker Crumbs
- ½ cup Butter (melted)
- 3 Eggs
Instructions
- Preheat your oven to 325°F (160°C).
- Crush the graham crackers into fine crumbs and mix with melted butter. Press into the bottom of a springform pan and bake for about 10 minutes. Let it cool.
- Beat the cream cheese until creamy and smooth, then add sugar and sour cream.
- Add eggs one at a time, mixing until just combined.
- Fold in chopped pistachios and a portion of the cherry filling.
- Pour the filling onto the cooled crust and spread it evenly. Bake for 45-50 minutes or until the edges are set.
- Cool at room temperature for 1 hour, then transfer to the refrigerator for at least 4 hours.
- Top with the cherry topping before serving and sprinkle with extra pistachios.
Notes
For best results, use room temperature ingredients and avoid overmixing to prevent cracks.
