Description

A delightful dessert combining rich chocolate, tart cherries, and fluffy whipped cream, all rolled into a beautiful cake.


Ingredients

  • 3/4 cup cake flour (or all-purpose flour + 1 tbsp cornstarch)
  • 1/4 cup unsweetened dark cocoa powder
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup melted butter
  • 1/4 cup vegetable oil (or coconut oil)
  • 1 cup fresh or frozen cherries, drained
  • 1 cup heavy whipping cream
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat the eggs with sugar until the mixture is pale and fluffy.
  3. Add the melted butter and oil gradually.
  4. Sift together the flour and cocoa powder in a separate bowl.
  5. Fold the dry ingredients into the wet mixture carefully.
  6. Pour the batter onto the baking sheet and spread it evenly.
  7. Bake for about 12-15 minutes or until a toothpick comes out clean.
  8. Remove it from the oven and let it cool for a few minutes.
  9. Flip the cake onto a clean kitchen towel and roll it up.
  10. Beat the heavy cream until soft peaks form and fold in the cherries.
  11. Unroll the cake and spread the filling evenly over the surface.
  12. Roll it back up without the towel and place seam-side down on a platter.
  13. Coat the roll in more whipped cream and garnish with chocolate shavings.
  14. Refrigerate for at least an hour before slicing.

Notes

Ensure the cake cools completely in the rolled shape to prevent cracking.
