- 3/4 cup cake flour (or all-purpose flour + 1 tbsp cornstarch)
- 1/4 cup unsweetened dark cocoa powder
- 3 large eggs
- 3/4 cup granulated sugar
- 1/4 cup melted butter
- 1/4 cup vegetable oil (or coconut oil)
- 1 cup fresh or frozen cherries, drained
- 1 cup heavy whipping cream
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat the eggs with sugar until the mixture is pale and fluffy.
- Add the melted butter and oil gradually.
- Sift together the flour and cocoa powder in a separate bowl.
- Fold the dry ingredients into the wet mixture carefully.
- Pour the batter onto the baking sheet and spread it evenly.
- Bake for about 12-15 minutes or until a toothpick comes out clean.
- Remove it from the oven and let it cool for a few minutes.
- Flip the cake onto a clean kitchen towel and roll it up.
- Beat the heavy cream until soft peaks form and fold in the cherries.
- Unroll the cake and spread the filling evenly over the surface.
- Roll it back up without the towel and place seam-side down on a platter.
- Coat the roll in more whipped cream and garnish with chocolate shavings.
- Refrigerate for at least an hour before slicing.

Ensure the cake cools completely in the rolled shape to prevent cracking.
