- 2 cups Heavy Cream
- 1 cup Whole Milk
- 3/4 cup Granulated Sugar
- 2 Vanilla Beans (or 2 tablespoons Vanilla Extract)
- 4 Egg Yolks
Instructions
- Begin by heating the heavy cream, whole milk, and sugar in a saucepan over medium heat. Stir gently until the sugar completely dissolves but do not let it boil.
- In a separate bowl, whisk the egg yolks until smooth.
- Slowly pour a bit of the warm cream mixture into the yolks to temper them.
- Gradually whisk the tempered yolks back into the saucepan with the remaining cream mixture.
- Heat gently while stirring constantly until the mixture thickens slightly and coats the back of the spoon.
- Remove from heat and let it cool. Stir in the vanilla bean seeds (or vanilla extract).
- Once cooled, chill the mixture in the refrigerator for at least a few hours, ideally overnight.
- Churn the chilled mixture in your ice cream maker according to the manufacturer’s instructions.
- Transfer the ice cream to an airtight container and freeze for a few hours until it firms up.
