Ingredients

  • 2 cups Heavy Cream
  • 1 cup Whole Milk
  • 3/4 cup Granulated Sugar
  • 2 Vanilla Beans (or 2 tablespoons Vanilla Extract)
  • 4 Egg Yolks

Instructions

  1. Begin by heating the heavy cream, whole milk, and sugar in a saucepan over medium heat. Stir gently until the sugar completely dissolves but do not let it boil.
  2. In a separate bowl, whisk the egg yolks until smooth.
  3. Slowly pour a bit of the warm cream mixture into the yolks to temper them.
  4. Gradually whisk the tempered yolks back into the saucepan with the remaining cream mixture.
  5. Heat gently while stirring constantly until the mixture thickens slightly and coats the back of the spoon.
  6. Remove from heat and let it cool. Stir in the vanilla bean seeds (or vanilla extract).
  7. Once cooled, chill the mixture in the refrigerator for at least a few hours, ideally overnight.
  8. Churn the chilled mixture in your ice cream maker according to the manufacturer’s instructions.
  9. Transfer the ice cream to an airtight container and freeze for a few hours until it firms up.
