Description

A traditional Italian dish made with thinly sliced beef rolled with a flavorful filling of herbs and cheese, simmered in a rich tomato sauce.


Ingredients

  • 1 lb thinly sliced flank or round steak
  • 1/2 cup fresh basil, chopped
  • 1/2 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 cup grated pecorino or Parmesan cheese
  • 2 cups homemade or jarred tomato sauce
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Prepare your filling: In a bowl, combine the chopped herbs, minced garlic, and grated cheese. Mix well, adding salt and pepper to taste.
  2. Lay your beef slices flat on a clean surface, and distribute the filling evenly over each slice, leaving a bit of space at the edges.
  3. Roll each slice tightly, securing it with kitchen twine or toothpicks.
  4. Heat olive oil in a large skillet over medium-high heat. Once hot, add the rolled beef and brown on all sides.
  5. Remove the rolls from the skillet and set them aside. Add your tomato sauce to the skillet, allowing it to come to a gentle simmer.
  6. Return the beef rolls to the skillet, cover, and let them simmer for at least an hour.
  7. Remove the braciole from the skillet, let it rest for a few moments before slicing, and drizzle tomato sauce over the top.

Notes

Slow cooking is key for tenderness. Allow resting time before slicing to preserve juices.
