- 1 ½ cups digestive biscuits or graham crackers, crushed
- ½ cup unsalted butter, melted
- 1 can (14 oz) sweetened condensed milk
- 2 ripe bananas, sliced
- 1 cup heavy cream
- 1 tsp vanilla extract
- ¼ cup brown sugar
Instructions
- Prepare the crust: Combine crushed biscuits with melted butter and press into pie dish. Bake at 350°F (175°C) for 10 minutes and let cool.
- Make the toffee: In a saucepan, heat sweetened condensed milk on low, stirring constantly for 30-40 minutes until thick and caramel-colored. Pour into cooled crust.
- Add the bananas: Layer sliced bananas evenly over the toffee.
- Whip the cream: Beat heavy cream until soft peaks form, then add vanilla and whip to stiff peaks. Spread over bananas.
- Garnish: Shave chocolate or sprinkle cocoa on top. Chill for at least 2 hours before serving.
Notes
For a dairy-free version, substitute coconut oil for butter, coconut-based condensed milk, and coconut cream for whipped cream.
