  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup honey (for glaze)
  • 2 tablespoons butter (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the ripe bananas until smooth, leaving a few small lumps for texture.
  3. Mix in melted butter until combined, then stir in sugar, eggs, and vanilla extract.
  4. Whisk together flour, baking soda, and salt in another bowl. Gradually fold the dry ingredients into the banana mixture.
  5. Fold in the chopped walnuts or pecans until evenly distributed.
  6. Pour the batter into the prepared loaf pan. Bake for about 60 minutes, or until a toothpick inserted comes out clean.
  7. Prepare the honey glaze by combining honey, melted butter, and a pinch of salt in a small saucepan and heating until warm.
  8. Remove the bread from the oven, cool in the pan for 10 minutes, then flip onto a wire rack and brush with honey glaze.
  9. Allow the bread to cool completely before slicing.

Notes

Use overripe bananas for best flavor. Don’t overmix the batter to maintain a moist texture.
