A rich and decadent yule log cake infused with coffee, mascarpone, and chocolate, perfect for holiday celebrations.
Ingredients

- 4 large Eggs
- 1 cup Granulated sugar
- 1 cup All-purpose flour
- 1/4 cup Cocoa powder
- 8 oz Mascarpone cheese
- 1 cup Heavy cream
- 1 cup Espresso or strong brewed coffee
- 1/4 cup Coffee liqueur or sambuca
- 8 oz Dark chocolate
- 1 cup Heavy cream (for ganache)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- Beat eggs until frothy, gradually add sugar, and continue beating until light and pale.
- Fold in sifted flour and cocoa powder just until combined, pour batter into the prepared pan, and smooth it into an even layer.
- Bake for 12-15 minutes until the cake is springy to the touch and let it cool.
- Combine mascarpone cheese with whipped heavy cream and stir in espresso and coffee liqueur.
- Unroll the cooled sponge cake, spread the tiramisu filling evenly, and roll the cake back up, wrapping tightly in plastic wrap. Refrigerate for a few hours.
- Heat heavy cream for ganache just below boiling and pour it over chopped dark chocolate, stir until smooth.
- Decorate the cool cake with ganache, creating patterns, and finishing with cocoa powder or edible gold flakes.
Notes
If you can’t find mascarpone cheese, you can use soft cream cheese as a substitute. This cake can also be stored for up to three days in an airtight container.
