Ingredients

  • 2 cups Confectioners’ Sugar (or erythritol for a lower sugar option)
  • 1/4 cup Coconut Cream or Sweetened Condensed Milk
  • 1 tsp Peppermint Extract
  • 8 oz Dark Chocolate (high-quality)

Instructions

  1. Prepare the filling: In a mixing bowl, sift the confectioners’ sugar. Add in the coconut cream (or sweetened condensed milk) and peppermint extract. Mix until smooth and creamy.
  2. Chill the mixture: Cover the bowl with plastic wrap and refrigerate the filling for about 30 minutes.
  3. Form the patties: Once chilled, use a small scoop or your hands to form small rounds. Flatten them slightly to create patties and place them on a parchment-lined baking sheet.
  4. Chill again: Put the prepared patties back in the refrigerator for about 15 minutes to set.
  5. Melt the chocolate: While the patties are chilling, melt your dark chocolate in a microwave-safe bowl in short bursts, stirring in between, until smooth.
  6. Coat the patties: Using a fork, dip each patty into the melted chocolate, allowing the excess to drip off before placing it back on the parchment paper.
  7. Set the chocolate: Place the coated patties in the fridge for about 20 minutes to allow the chocolate to set completely.
