- 2 large sweet onions (such as Vidalia or Walla Walla)
- 1 cup freshly grated Parmesan cheese
- 1 cup cornstarch
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon freshly cracked black pepper
- Oil (olive oil or avocado oil) for drizzling
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare the onions by slicing them into thin rings, about 1/4 inch thick.
- Dredge: In one bowl, place cornstarch. In another bowl, whisk the eggs. In a third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, and black pepper.
- Coat each onion ring in cornstarch, then dip into the egg mixture, and finally coat in the breadcrumb mixture.
- Arrange the coated onion rings on the parchment-lined baking sheet, making sure they’re not touching. Drizzle with oil.
- Bake for 20-25 minutes or until golden and crispy, turning halfway through.
- Cool for a minute before serving, ideally with your favorite dipping sauces.
Notes
For extra flavor, sprinkle smoked paprika on top before baking. Avoid overcrowding the baking sheet for best results.
