Description

Deliciously crispy onion rings coated in Parmesan cheese and baked to perfection for a satisfying snack or side dish.


Ingredients

  • 2 large sweet onions (such as Vidalia or Walla Walla)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup cornstarch
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly cracked black pepper
  • Oil (olive oil or avocado oil) for drizzling

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the onions by slicing them into thin rings, about 1/4 inch thick.
  3. Dredge: In one bowl, place cornstarch. In another bowl, whisk the eggs. In a third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, and black pepper.
  4. Coat each onion ring in cornstarch, then dip into the egg mixture, and finally coat in the breadcrumb mixture.
  5. Arrange the coated onion rings on the parchment-lined baking sheet, making sure they’re not touching. Drizzle with oil.
  6. Bake for 20-25 minutes or until golden and crispy, turning halfway through.
  7. Cool for a minute before serving, ideally with your favorite dipping sauces.

Notes

For extra flavor, sprinkle smoked paprika on top before baking. Avoid overcrowding the baking sheet for best results.
