- 1 cup Unsalted Butter, room temperature
- 1 cup Granulated Sugar
- 1 cup Brown Sugar
- 1/2 cup Freshly Brewed Coffee
- 2 cups All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- 1 Egg
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until just combined. Then stir in the coffee.
- Combine flour and baking powder in a separate bowl, then gradually add to the wet ingredients.
- Drop tablespoon-sized dough onto the baking sheet, spacing them two inches apart.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For extra texture, sprinkle sea salt on top of cookies before baking. Allow cookies to cool completely for best results.
