Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup cocoa powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the eggs one at a time, along with the vanilla extract, mixing well between each addition.
  4. Whisk together the flour, baking powder, baking soda, cocoa powder, and a pinch of salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until well combined.
  6. Divide the dough in half. Take one half and fold in additional cocoa powder for a richer chocolate flavor if desired.
  7. Roll the half of the vanilla dough and half of the chocolate dough together to form a log.
  8. Wrap the log in plastic wrap and refrigerate for at least an hour.
  9. Slice the log into 1/4-inch thick rounds and place them on the prepared baking sheets.
  10. Bake for about 10-12 minutes, until the edges are just starting to turn golden.
  11. Cool before decorating or enjoying plain.

Notes

Ensure your butter is at room temperature for easier creaming. Using a cookie scoop helps with uniform size for even baking.
