A delightful quick bread made with sourdough discard, infused with cinnamon and a hint of nutmeg, perfect for breakfast or snacks.

Ingredients

Scale
  • 1 cup sourdough discard
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Combine the sourdough discard, sugar, and eggs in a large bowl and whisk until smooth.
  3. Stir in the milk and vanilla extract until well blended.
  4. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake for 40–50 minutes, or until a toothpick comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For optimal flavor, allow the bread to cool completely before slicing. You can add nuts or dried fruit for variation.
