Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 15×10-inch jelly roll pan.
- Mix dry ingredients: In a bowl, whisk together the flour, ginger, cinnamon, cloves, baking powder, and baking soda. Set aside.
- Combine wet ingredients: In another bowl, beat together the eggs, sugar, molasses, and melted butter until smooth.
- Combine mixtures: Gradually fold in the dry ingredients into the wet mixture until just combined.
- Pour and bake: Pour your batter into the prepared pan, smoothing out the surface. Bake for 12-15 minutes.
- Cool and roll: Let the cake cool slightly, then turn it out onto a towel sprinkled with powdered sugar. Roll it up with the towel to maintain its shape while cooling.
- Prepare the frosting: Beat the cream cheese and powdered sugar until smooth. Add milk if desired.
- Unroll and frost: Unroll the cooled cake, spread with frosting, then roll it back up.
- Chill and decorate: Refrigerate for an hour, frost outer layer, and decorate.
- Slice and enjoy: Slice your creation and serve it with hot cocoa or spiced coffee!
Notes
For the frosting, you can add a tablespoon of milk for creaminess. Don’t forget to flour the pan to prevent sticking.
