Description

A comforting dish of turkey meatballs simmered in a creamy pumpkin sage sauce, perfect for autumn gatherings.

Ingredients

Scale
  • 1 lb ground turkey
  • 1 cup pumpkin puree
  • 1/4 cup fresh sage, chopped
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 onion, chopped
  • Salt and pepper to taste
  • Olive oil for cooking
  • Vegetable broth as needed

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, mix the ground turkey, breadcrumbs, grated Parmesan cheese, minced garlic, chopped onion, egg, salt, and pepper.
  2. Roll Meatballs: Shape into meatballs, approximately 1 inch in diameter, and place on a baking sheet.
  3. Brown the Meatballs: In a skillet over medium heat, add olive oil and brown the meatballs on all sides for about 6-8 minutes.
  4. Make the Pumpkin Sage Sauce: In the same skillet, sauté garlic and sage, then add pumpkin puree and vegetable broth, seasoning to taste.
  5. Combine: Add the browned meatballs to the sauce, simmer for 15 minutes.
  6. Serve: Plate meatballs generously covered with pumpkin sage sauce, garnished with fresh sage.

Notes

Avoid overmixing the meatball mixture to keep them tender. Vegetarians can substitute turkey with plant-based protein.
