A delightful lasagna layering sautéed mushrooms, creamy ricotta, and fresh spinach, perfect for family gatherings or cozy dinners.


Ingredients

  • Lasagna noodles
  • Fresh cremini or button mushrooms
  • Fresh spinach
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Fresh garlic
  • Onion
  • Butter
  • Milk or cream
  • Fresh basil or oregano

Instructions

  1. Prepare the mushrooms: Start by heating a skillet over medium heat, melting butter to sauté diced onions until translucent. Add minced garlic, followed by your cleaned and sliced mushrooms. Sauté until the mushrooms are golden brown and have released their moisture. Season lightly with salt and pepper.
  2. Add spinach: Stir in fresh spinach until wilted (or thaw and squeeze dry the frozen ones). Set this mixture aside to cool slightly.
  3. Make the cheese mixture: In a bowl, combine ricotta cheese, half of the mozzarella, grated Parmesan, beaten egg, salt, pepper, and some dried herbs. This will be the creamy layer that binds everything together.
  4. Start layering: Spread a thin layer of your béchamel or a tablespoon of milk in the bottom of your baking dish to prevent sticking. Place a layer of lasagna noodles, followed by half the mushroom and spinach mixture, half the cheese mixture, and another layer of noodles. Repeat these layers, ending with noodles topped with the remaining béchamel or milk and a generous topping of mozzarella.
  5. Bake: Cover with foil and bake in a preheated oven at 375°F for about 25 minutes. Remove the foil and allow to bake for another 15 minutes, or until golden and bubbly on top.
  6. Let it rest: Once out of the oven, let your lasagna rest for 10 to 15 minutes. This will make it easier to slice and serve.

Notes

For a lighter version, use cottage cheese instead of ricotta, or mix ricotta with Greek yogurt for added protein and tang.
