- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 cup sharp cheddar cheese, grated
- 4 oz goat cheese, crumbled
- 1 tablespoon fresh thyme or chives, chopped
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the flour, butter, and cream cheese in a large bowl until you achieve a crumbly texture.
- Knead the dough briefly on a floured surface until smooth, wrap it in plastic wrap, and chill for about 30 minutes.
- Prepare the cheesy filling by mixing the cheddar, goat cheese, and herbs in a separate bowl. Season with salt and pepper.
- Remove the dough from the refrigerator and roll it into small balls, about the size of a tablespoon. Place them on the prepared baking sheet.
- Create an indentation in the center of each ball using your thumb or the back of a measuring spoon.
- Spoon the cheesy filling generously into each indentation, allowing it to overflow slightly.
- Bake for 18-20 minutes, or until the edges are golden brown and the cheese is bubbly.
- Cool for a few minutes before serving.
Notes
For a spicier version, substitute cheddar with pepper jack cheese. You can also add finely chopped bell peppers or mushrooms to the filling for extra flavor.
