Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- Cream the butter and powdered sugar in a large mixing bowl until light and fluffy, about 3-5 minutes with an electric mixer.
- Add vanilla extract to the butter-sugar mixture and mix until well incorporated.
- Sift together the all-purpose flour and salt in a separate bowl.
- Gradually combine the dry ingredients into the creamed butter mixture, mixing until just combined.
- Fold in the chopped pecans, incorporating them evenly throughout the dough.
- Scoop about a tablespoon of dough and roll it into a ball. Place each ball on the baking sheet, leaving space for spreading.
- Bake for 10-12 minutes, or until the bottoms are lightly golden.
- Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.
- Dust generously with powdered sugar once cooled and enjoy!
